Mediterranean artichokes (Cynara scolymus) are native to North Africa and Southern Europe and are renowned for their nutritional value and health benefits. Furthermore, artichoke leaves (called "bracts") also possess cell-protective qualities - the artichoke has the highest antioxidant capacity among all vegetables [1].
A group of compounds called anthocyanidins (cyanidin, peonidin, and delphinidin) is found in artichokes, including caffeine, quinic acid, cynarin, and chlorogenic acid.
